Lemon Chicken and Rice Soup

I love this soup.  Love it.  And it's so easy.

1 cup rice
juice of one lemon and water to equal 2 cups.  (For me it was 1 3/4 cup water and 1/4 cup lemon juice)
zest of one lemon
Make rice as you usually would.  I used my rice cooker.

Saute 1 small onion in 2 TBSP olive oil
Add 3 carrots diced
2 celery stalks, diced
6 cups chicken stock (home made is always best.  I cheat and use bullion cubes)
2 cups diced cooked chicken (I used half a roasted chicken from the store)
Bring to a boil, then let simmer until vegetables are soft

Add in Lemon rice and simmer until ready to serve.

Delicious

Chicken Fingers

My toddler is not such a big fan of meat. But if I make these chicken fingers, he eats them right up.

1 egg
~1 Tbsp Soy Sauce

~2 cups Panko Bread crumbs
~1/4 cup Parmesan Cheese

3-4 chicken breasts (boneless/skinless)

Whisk egg and soy sauce together

Mix Panko and Parmesan cheese together on a plate.

Cut chicken breasts into strips.

Dip each chicken strip into egg mixture, then coat in bread crumb mixture.


Bake at 350F for about 25 minutes

Who knew something so simple could be so delicious!!

I was looking for something to make for supper, and somehow came across this while looking for a recipe for Balsamic Chicken. It was delicious. My toddler loved it, my husband loved it, and I loved it. And so easy to make. Didn't take very long.

Amazing Chicken

This is basically Apricot Chicken, but better than the last recipe I posted. Again from "The Big Cook"

2 lb Chicken Breast
1 pkg Onion Soup Mix
1 tsp Paprika
1/4 cup Cider Vinegar
1/2 cup ketchup
1/4 cup sugar
1 TBSP lemon juice
1/4 cup oil
1/2 small onion minced
1/2 cup Apricot jam

Combine all ingredients and pour over chicken.

Slow Cooker high for 4-6 hours or Low for 6-8 hours. We did Low for 4-5 hours, then left it on warm until dinner time.

Again I totally forgot to take pictures. This meal was delicious. And my husband even commented on it.

Curried Chicken

This is a great Crock Pot recipe.

2lb Chicken breast
2 TBSP butter
1 cup melted honey
1/3 cup mustard
1 TBSP curry powder
salt (optional)

Mix all ingredients and pour over chicken in slow cooker.

4-5 hours on high or 6-8 hour on low.

Mine was done actually after 4 hours on low.

It was so good with rice and peas.

Apricot Chicken

I looked and looked for a good Apricot Chicken recipe. And then I forgot some of the ingredients when I went shopping. So today I improvised and came up with my own recipe. Here it is.

1 1/2 T apple cider vinegar
1 T honey
3 T ketchup
~ 3 T Olive Oil
1 tsp worcestershire sauce
salt
pepper
~3 T Apricot Jam
4 chicken pieces (any cut will do, I used thighs)

Mix vinegar, honey, ketchup, olive oil, worcestershire sauce, salt and pepper.


Add Jam

Add Chicken and coat well.


Cook at 350 for 30 minutes.

Chicken and Dumplings

I needed a quick meal on Saturday, and some comfort food was in order. This is one of my favourite recipes, but I don't make it often. (too much salt)
I didn't take any pictures.

~1lb chicken, shredded or cute into pieces
2 cans cream of mushroom soup
2 cups Bisquick mix
1/2 cup milk

Cook chicken in deep frying pan with lid. Sprinkle with seasoning salt. Pour in mushroom soup and add about 1/2 cup water.
Follow the directions on the bisquick box for "drop' biscuits.
Drop biscuits on top of soup/chicken mixture. (I make between 6-8 biscuits)
Cover and let simmer for 20 minutes.

Bourbon Chicken

Once again, not creative today. So I found a recipe online and it looked good. And it was. I have no idea why it is called Bourbon Chicken. No bourbon was used in the making of this chicken. None.
We had this chicken with rice and a salad. (still using up the cherry tomatoes from my garden)
